Need a quick, go-to recipe to add to your rotation?  This Sweet Onion Bacon Quiche is freezer friendly and perfect for any time of day.  Serve it for breakfast or for dinner and your family is sure to enjoy the heartiness of this amazing quiche.

What is quiche?  From Wikipedia:

Quiche (/ˈkʃ/KEESH) is a savoury, open pastry crust with a filling of savoury custard with one or more of cheese, meat, seafood or vegetables. Quiche can be served hot or cold. It is part of French cuisine but is also popular in other countries, particularly as party food.

I don’t know if City Spouse knew what a quiche was before I started making Quiche Lorraine for him when we first got married.  Comparable to an omelet in a pie crust, it’s a quick and easy way to make a hearty meal without too much prep.  I have made quiche with all kinds of things, from broccoli and cheese to leftover chicken.  It’s a very versatile base recipe.

Sweet Onion and Bacon Quiche Recipe Freezer Friendly

Sweet Onion and Bacon Quiche Recipe Freezer Friendly

Ingredients

  • 1 9" pie crust
  • 1 medium sweet onion, thinly sliced
  • 2 tbsp. butter
  • 1 tbsp. sugar
  • 4 eggs
  • 1 1/2 cups whole milk
  • 2 c. grated Swiss cheese
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1/8 tsp. nutmeg
  • 6 strips bacon, fried crisp, drained and crumbled

Instructions

  • Preheat oven to 400 degrees F.
  • Prepare pie crust in pan, trimming and crimping edges as you would for a single crust pie. Set aside.
  • Over medium heat in a large skillet, cook onion, butter and sugar. Stir occasionally. Cook until onions are tender and starting to caramelize, about 15 minutes.
  • Set cooked onion mixture aside to cool.
  • Whisk eggs in medium mixing bowl. Add milk, cheese, salt, pepper and nutmeg. Stir to combine well.
  • Place onion mixture in an even layer over bottom of prepared pie crust. Pour egg mixture over top. Sprinkle with crumbled bacon.
  • Bake for 35-40 minutes at 400 F., until center is set. Cut into wedges and serve warm or at room temperature.
  • To Freeze:
  • Prepare as above. Do not bake.
  • Freeze unbaked quiche on a cookie sheet until solid. Cover with foil. Place inside large (2 gallon works best) freezer bag, labeled and dated.
  • To prepare: Thaw overnight in refrigerator. Bake as directed above.

I grow onion sets in my garden, making this quiche quick and easy to prepare ahead of time.  If you have your own laying hens, this may be a perfect way to use up your eggs before they go bad.  Experiment with your own family’s tastes and preferences.  You may want to substitute ham for the bacon.  Just dice it up and layer over the onion mixture before pouring in the eggs.

Try this wonderful and hearty quiche today.  You may be surprised how hearty and yummy it is… even for those who are not normally fans of onion.
