Need to feed the family but don’t want to heat up the kitchen? Make these Simple Chicken Caesar Wraps instead.

Summer can be excruciatingly hot.  I myself am not lucky enough to work in an air-conditioned facility, so I have to suffer through the heat of the sweltering summer months with only fans blowing hot air all day at work.  I come home and have yard work to do outside, further suffering through the heat.  So when it comes to summer, having to heat up the kitchen and deal with even more heat is not something that I look forward to.

I love my CrockPot during the summer months and tend to use it a lot when I think ahead.  But sometimes I just want to toss something together that is cool yet filling after a long, hot day.  These Simple Chicken Caesar Wraps fit the bill nicely, and typically incur zero complaints.

To make your Simple Chicken Caesar Wraps you need:

  • large flour tortillas
  • boneless skinless chicken breasts
  • romaine lettuce
  • Ceasar dressing
  • grated Parmesan cheese

*If you want to be able to throw this together even faster, purchase pouches of already cooked chicken (like this) to not have to heat up your kitchen at all. *

Microwave 2-3 tortilla shells for 10-15 seconds to soften.

Lay chicken, dressing, Parmesan down center of tortilla, leaving space at the bottom to roll end up.

Drizzle with Ceasar dressing.

Once all of the fillings are in place, pull one side across to meet the other side.  Pressing gently, pull back on the tortilla to “swaddle” the fillings.  Fold in the end of the shell, where you left a little space.  Roll up the shell completely.  Serve and enjoy.

For a great post on the perfectly rolled burrito or wrap, check out this post from The Kitchn.

You may serve with a side dish, fruit, or eat only the wraps, as there is everything you need, wrapped up in a portable shell.

Make these ahead for lunches or on the go snacks, but pack the dressing on the side so that the tortillas don’t become soggy.

Wraps are the perfect go-to summer meal.  I love having a simple summer supper of wraps and fresh fruit.  It’s the perfect way to end a chaotic day… Simply.
