Getting a healthy, filling breakfast on the table every morning can be a hassle.  Try adding this Sausage and Hash Brown Slow Cooker Breakfast Casserole to your meal rotation to make breakfast time a little less stressful.

Mornings can be hectic.  Starting your day off with stress does not help your attitude moving forward.  I like to have this casserole on hand and ready to go to make my morning just a little more relaxing on my already frenzied weekday mornings.  Not only is it simple to get in the slow cooker the night before, it also reheats well during the week so you can serve leftovers later (if you have any!).

 My schedule (like most of you) is a flurry of trying to get everything ready to head out the door for an equally stressful day at work.

My morning starts at 3:30 am when I have to get out of bed to start readying myself for work.  I try to get a few cups of coffee drank, some light cleaning done (like unloading the dishwasher), and check some emails from you all, my lovely readers.

Breakfast sometimes gets skipped for lack of time.  Which is why I love being able to have breakfast cooked when I wake up… just like I have my coffee brewed and waiting when I come downstairs.  I prep my coffeepot, why not my breakfast?

Sausage and Hash Brown Slow Cooker Breakfast Casserole *Freezer Friendly*

Ingredients

  • 4 cups frozen hash browns
  • 3 tbsp. butter
  • 1 large onion, chopped
  • 2 cups sliced mushrooms
  • 3 cloves garlic, minced
  • 1 pkg. breakfast sausage, browned and drained
  • 1 pkg. frozen chopped spinach, thawed and squeezed dry
  • 8 eggs
  • 1 cup milk
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 1/2 cups shredded sharp Cheddar cheese, divided

Instructions

  1. Coat inside of slow cooker with cooking spray.
  2. Place hash browns in crock.
  3. Melt butter in large nonstick skillet over medium-high heat. Cook onion, mushrooms and garlic 4-5 minutes, or until starting to brown.
  4. Add spinach and cook another 2 minutes, until heated through and mushrooms are tender.
  5. Stir in cooked sausage.
  6. Add sausage mixture to slow cooker and stir to combine.
  7. Whisk together eggs, milk, salt and pepper in a bowl.
  8. Pour over hash brown mixture.
  9. Top with 1 cup of the cheese.
  10. Cook, covered on LOW 4 to 4 1/2 hours or HIGH for 1 1/2 to 2 hours. (Make sure eggs are set.)
  11. Top with remaining cheese.
  12. Cut into wedges to serve.
  13. Freezer instructions:
  14. Melt butter in large nonstick skillet over medium-high heat. Cook onion, mushrooms and garlic 4-5 minutes, or until starting to brown.
  15. Add spinach and cook another 2 minutes, until heated through and mushrooms are tender.
  16. Stir in cooked sausage.
  17. Allow to cool.
  18. Mix together sausage mixture and hash browns and place in large freezer bag.
  19. Label and date.
  20. To cook: Dump contents of freezer bag into slow cooker.
  21. Mix eggs, milk, salt and pepper in bowl. Pour over hash browns in Crock-Pot.
  22. Top with 1 cup of the cheese.
  23. Cook, covered on LOW 4 to 4 1/2 hours or HIGH for 1 1/2 to 2 hours. (Make sure eggs are set.)
  24. Top with remaining cheese.
  25. Cut into wedges to serve.

I want to note that while eggs can be frozen, I do not freeze them with the hash browns in this recipe.  I did try to do so, only to have the egg absorb into the hash browns and not set up properly when cooked.  If you would like to freeze the egg mixture also, whisk it up and freeze in a separate freezer bag within the larger to prevent the liquid from absorbing.  You may also freeze the cheese in a separate bag within the larger if you so desire.
