Quick & Easy One Bowl Zucchini Bread

I’m a sucker for a good piece of bread… whether it’s zucchini, banana, or even pumpkin, if it’s a fruit or veggie I can sneak into some bread, I’m a happy girl.

So each year, I plant a section of my garden for zucchini.  Not only for this bread (although I do make a LOT of it) but for my Lemon Blueberry Zucchini cake and a host of other recipes that use zucchini.  (Zoodles, anyone?)

Okay… onto my bread.

This used to be just a treat, but since I learned that I married a man who seems to fight me tooth and nail to eat anything even remotely resembling a vegetable (unless deep fried) I have to sneak veggies in where ever I can.

And who can resist these gorgeous loaves of yummy goodness??°

And I only dirty 1 bowl, 1 spoon, my measuring cups & spoons, two loaf pans and a spatula.  Not even enough to interfere with washing supper dishes in the dishwasher!

Start with mixing all of the wet ingredients with the sugar.  The sugar dissolves and creates almost a syrup-y consistency.   And honestly, it’s fun to whip everything together.

Measure and dump all the dry ingredients on top of the wet mixture.
Stir until blended, but only until the dry is gone.  Over-mixing will make your bread tough, and we are going for dense yet fluffy.

Divide evenly between your greased loaf pans and bake.

Instructions
  1. Place your oven racks so that the tops of the loaves will rise and be in the approximate center of your oven. Preheat to 350°F. Grease the bottoms only of your loaf pans with spray or whatever you choose to use.
  2. Mix zucchini, sugar, applesauce, vanilla, and eggs in a large bowl. Add in all other ingredients (except nuts, if using). Divide batter evenly between your loaf pans.
  3. Bake approximately 1 hour, or until a toothpick inserted in the center comes out clean. Cool for 10 minutes in the loaf pans.
  4. Loosen sides of loaves from pans (if necessary) using a paring knife. Turn onto wire racks, and cool (top side up) completely before slicing.
  5. Wrap tightly, or place into a gallon size freezer bag, getting out as much air as possible. Stores for 4 days at room temperature and 10 days if refrigerated.
