I know it is early in the season, but I am already excited for the coming planting and harvest season.  This is the time of year when I check my storage from last season and start making sure to use it up in order to make room for the new harvest to be put up.

I still have a lot of zucchini in the freezer, and while it’s not ideal for this casserole so I will probably be making a few different things (like my bread here) this casserole is one of my favorites!

This casserole is such a wonderful way to use up the few zucchini you harvest in an evening when you only have a couple to use up.  There are a lot of days after work that I run out and see a few to harvest, and this recipe makes quick use of them.  I love that it’s interchangeable with so many other side dishes, and with the adding of the cheese, City Spouse seems to actually be ok with eating it.  (Kind of like when I make the Zucchini Blueberry Lemon cake!!)

Try this on your pickiest eaters and see if they like it.  I know a lot of people who are way happier eating vegetables if you throw in some cheese- and this one does just that.  Play around with the spices if you like.  CS seems to always add some pepper, so I have added in white pepper to it and it turned out great, but I still like it best in its original form.

Ingredients

Instructions
  1. Preheat oven to 350F.
  2. Grease a casserole dish with butter
  3. In a heat proof bowl, place sliced zucchini. Pour boiling water over zucchini and let sit for 3 minutes. Drain and set aside.
  4. In a separate bowl, whisk together eggs, cottage cheese, rice, salt, onion, marjoram and chives.
  5. Layer the bottom of prepared casserole dish with zucchini, then pour half egg mixture on top. Do another layer of zucchini and pour the rest of egg mixture on top. Spread parmesan and mozzarella on top.
  6. Bake for 45 minutes, or until casserole seems set.
  7. Serve hot and enjoy.

  7. Yum that sounds good! I saved your recipe to my pinterest casseroles. It sounds sort of like my zuchini patties which I mix shredded zuchini, 1 tablespoon of bisquick, and an egg and then sautee and sprinkle with parmesan cheese and I love them but this casserole version may be easier or at least you could have it all done at one time.
