Every year, I have tons of veggies growing in my backyard.  I just love the ability I have to go out and pick our supper right then.  It’s like having a produce section right at home!

Two of my most prolific producers are invariably tomatoes and cucumbers.  I absolutely love both of them.  So over the years, making new salad ideas and recipes from these two vegetables has become a kind of hobby for me.  This is when I came across the idea of a new take on tuna salad.

Don’t get me wrong… I love traditional tuna salad also.  It’s fun to change it up over the summer months, however, when I have so much free produce for the harvesting.  I can check the garden, grab the ingredients I need and then run into the house to wash it, chop it up, and have a fresh, healthy meal to pack in my lunch for the next day.  It’s quick and easy for me to do, and the fact that it’s absolutely delicious and packed with organic, vitamin-packed vegetables is a definite upside.

This year, plant yourself a few tomato plants and some cucumbers and enjoy this yummy sandwich grown with your own hands.

Homegrown Garden Fresh Tuna Salad

Ingredients

  • 1 cup canned tuna in water, drained
  • 1 cup chopped tomato
  • 3/4 cup diced cucumber
  • 1 tsp minced onion
  • 1/2 cup mayonnaise
  • salt & pepper to taste

Instructions

  • Combine tuna, tomato, cucumber and onion.
  • Moisten with mayonnaise until at a good spreading consistency.
  • Season with salt and pepper to taste.
  • Serve on bread of your choice, or on a lettuce leaf.
