Easy Cheesy Cajun Seafood Pasta

This easy weeknight cheesy cajun seafood pasta recipe is still fancy enough for a weekend dinner party.  Try it tonight.

I love having easy yet yummy recipes in the meal plan.  I love seafood in all forms.  Don’t believe me?  Check out my Crab Cake Macaroni and Cheese recipe too.

The most time-consuming part of this recipe is a toss up between chopping vegetables or boiling water. I suppose it depends upon your stovetop on which one will win.  The use of imitation crab and lobster meat cuts down considerably on both time and cost of this recipe.  Using real meat would require a ton more prep work, from cooking to cleaning and picking through.  I just do not have the time for that during the week.

Just because I don’t have a lot of time doesn’t mean that I don’t want dinner to seem like I just threw something together.  I could just as easily put some bologna sandwiches on the table.  Who really wants that?  It’s akin to eating a bowl of cereal for dinner.  There would be a lot of resentment and sideways glances across the dinner table if I ever attempted that.

Besides, City Spouse would just sneak out after I went to bed to a drive-thru joint down the road.

I love that this seems like a high-end, fancy dinner that you would order during a date-night dinner out.  Yet, it’s on the table within 45 minutes.

Easy Cheesy Cajun Seafood Pasta

Easy Cheesy Cajun Seafood Pasta

Ingredients

  • 2 Tbsp. butter
  • 1 cup chopped onion
  • 1/2 cup chopped green bell pepper
  • 1/2 cup chopped celery
  • 2 cloves garlic, minced
  • 2 Tbsp. flour
  • 1 tsp. Cajun seasoning
  • 1 1/2 cups half-and-half
  • 8 oz. prepared cheese queso blanco with jalapeno, cubed
  • 1 pkg. imitation crab meat, flake-style
  • 1 pkg. imitation lobster, flake-style
  • 1 16 oz. package pasta (I used fettuccini) cooked according to package directions

Instructions

  • In a large skillet over medium heat, melt butter.
  • Add in onion, bell pepper, celery and garlic; saute until soft, about 6 minutes.
  • Add flour and Cajun season. Cook for 2 minutes stirring constantly.
  • Stir in half-and-half and cook until thickened, about 6 minutes, stirring constantly.
  • Add cubed cheese, stirring until melted.
  • Stir in seafood, and simmer until heated through, about 3 minutes.
  • Serve over cooked pasta.

The queso Blanco cheese mentioned in the recipe is a Kroger brand product similar to this one.  You may use Mexican Velveeta if you prefer that kind.  I like white cheese better, so that is what I use.  Feel free to substitute in order to meet your family’s personal preferences.
