Broccoli Watercress Soup- Healthy and Healing Recipe
- 1 tbsp. olive oil
- 1 shallot, chopped
- 2 cloves garlic, diced
- 4 cups vegetable broth
- 1 bag frozen broccoli florets, thawed
- 1 tsp. oregano
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1 tbsp. red wine vinegar
- 1 jalapeno, seeded and diced
- 1 bunch watercress
- Juice from 1/2 lemon
- 1 cup almond milk, unflavored
- Parmesan cheese to garnish, if desired
- Heat the olive oil in a large saucepan over medium heat.
- Add in shallot and garlic. Saute for about 3 minutes, or until fragrant.
- Add vegetable broth to saucepan.
- Stir in broccoli, oregano, salt and pepper.
- Reduce heat and simmer for 20 minutes.
- Stir in red wine vinegar, jalapeno, watercress and lemon juice.
- Puree using a hand blender. Or transfer to your blender and then return to saucepan.
- Stir in almond milk. Heat for 2 minutes.
- Garnish with Parmesan and/or toasted sunflower seeds.
